Something wholesome and healthy; simply the finest venison steak with a mushroom of your choice and served with a side salad.

Ingredients

4 Venison steaks - cuts of your choice

150g Mushrooms - be adventurous and try something exotic

3 tbsp Butter

Salt and pepper

Side salad

Method

1. Leave the venison steaks out at room temperature for about 30 minutes and season with salt and pepper

2. Rinse the mushrooms and cut off the base of the stem

3. Bring a heavy bottomed pan to a high heat and melt the butter

4. Shallow fry the venison steaks for about 3 minutes on either side. Then place the pan in a pre-heated oven (200C) for a further 3 minutes, then rest

5. Whilst the venison is in the oven lightly fry the mushrooms in the remaining butter until softened then remove from the heat

6. Serve the venison and mushrooms with a side salad of your choice
