Spicy Venison Fajitas
Inspired by a Lidl beef fajitas recipe, this version is a great messy party option using your own sourced venison!
350g Venison, cut into strips
1 Red onion, sliced
2 Cloves garlic, finely chopped
2 Red chilies, finely chopped
1 Lime, quartered
30g Fajita spice mix
2 tbsp Tomato puree
200g Peppers, sliced
4 White tortilla wraps
200g Greek style yoghurt (fat free)
2 Baby gem lettuce, shredded
1 Handful of chopped coriander
1. In a hot pan cook the onion (5 mins) and then add the garlic and chilli, followed by the fajita spice mix.
2. Add the venison strips, the tomato puree and peppers. Cook for about 10 mins turning regularly to ensure the venison is sealed on all sides. Now season and add the spinach, stirring until it wilts.
3. Warm the tortilla in a low oven or microwave, then layer with the yoghurt, lettuce and then the filler (venison etc) before garnishing with the coriander. Drizzle with a little lime and enjoy
