Rabbit Dogs!

An unexpected use of rabbit from the great magazine 'Talking Game'
Ingredients
1 Rabbit, jointed
1 litre milk
2 tbs Cajun spice mix
100g butter
4 large brioche hot dog buns
Mixed green salad
For the Salsa
12 Cherry tomatoes, quartered
1 Red chilli, deseeded and finely sliced
2 Spring onions, chopped
1 tbs Sugar
Pinch of salt
1 tbs Sriracha chilli sauce
2 tbs Chopped coriander
For the mayo
2 tbs Sriracha chilli sauce
4 tbs Mayonnaise
1 tbs Smoked paprika
Method
1. Cover the rabbit joints in a pan with the milk, 500ml water and 2 tsp of salt. Bring to the boil and then turn down to a simmer. Simmer for 1 to 1.5 hours until completely tender. Shred the meat from the bone and set aside.
2. For the sales simply mix all the ingredients in a bowl and set aside for 10 minutes for the flavours to mix.
3. For the mayonnaise mix all the ingredients together.
4. To finish the rabbit, place the meat in a pan with the butter and fry over a medium heat until browning and going crispy on the edges. Add the cajun seasoning and fry for a further minute, ensuring the meat is evenly coated.
5. Halve and slightly toast the rolls. Then, firstly put some green salad in the bottom, then the rabbit, then the salsa. Finally drizzle on some mayo.
