Spit roast a rabbit on your next camping trip and feel connected to what's around you whilst enjoying a delicious healthy meal.

Ingredients

1 Rabbit, skinned and cleaned

250ml Oil

Juice from one lemon and some zest from he peel

2 Sprigs of sage

2 Sprigs of rosemary

2 Cloves garlic, crushed or finely chopped

2 tsp Sea salt

2 tsp Crushed black pepper

Method

OK, so you have to get a rabbit, light a fire (safely), and let the fuel burn down to a white hot charcoal, whilst also cutting some branches to fashion a spit, but its well worth it!

1. For the marinade, mix the oil, with all other ingredients less the rabbit. Now place the rabbit inside the marinade and leave for approximately 4 hours (longer if you can)

2. Remove the rabbit from the marinade and skewer the carcass with water soaked green branches - one long skewer along the length and two shorter skewers through the legs to keep the long one in place. Alternatively use a low cost camping spit kit!

3. Place over a fire that is burning white hot from the coals or wood fuel. Cook for approximately 30 minutes (depending on height), turning and basting with the remaining marinade regularly.
