Take a wood pigeon, some portobello mushrooms, spiced chickpeas and some herbs - what do you get? Something very special!


For the pigeon

2 Whole prepared pigeons

2 tbsp Butter

Thyme or rosemary

4 cloves of garlic

For the Mushrooms

4 Portobello mushrooms

1 Full garlic

1 Shallot


For the Chickpeas

200g Chickpeas (washed)

1 Shallot (finely diced)

1 Clove of garlic (grated)

1/2 tsp Smoked paprika

1 tbsp Honey



1. Melt the butter with garlic and herbs, now baste the pigeon with melted butter. Brown the pigeon on all sides in a non stick pan, then place the pigeon onto a roasting tray.

2. Roast the pigeon at 220C for 12-15 minutes, then leave to rest five minutes before serving.


Brush the mushrooms with plenty of oil, finish over with the shallot, garlic & thyme. Season well and bake in an oven at 220C for 15 minutes.


Place a small pot onto a medium heat, add butter and 1 tbsp oil add the diced shallot, garlic followed by chickpeas. Cook for 5 minutes and then add the smoked paprika & honey. Cook for another 5-7minutes, season well.

Serve with the pigeon immediately.
