Pheasant and bacon Bolognese

Ingredients
800g Pheasant mince
4 Shallots, diced
3 Cloves of garlic, minced
200g Smoked bacon lardons
2 x 400g Tins chopped tomatoes
150g Tomato puree
2 tbs Italian mixed herbs
Handful of cherry tomatoes
Handful fresh basil
Parmesan
Olive oil
Pasta of your choice
Method
1. Heat some of the oil in a large frying pan and then add the shallots, garlic and bacon lardons. Gently cook until browned.
2. Add the pheasant mince and brown for a couple of minutes before adding the tined tomatoes, puree and herbs. Simmer until the sauce thickens. Season to your taste as you go.
3. Stir in the cherry tomatoes, sprinkle with the basil and freshly grated parmesan. Cover with foil whilst you cook the pasta.
4. Serve with a wine of your choice!
