A great way to cook snipe in the field and enjoy almost immediately!
2 Snipe (plucked)
2 tbsp Butter
Bunch of red currants
Salt and Pepper to season
1. Get a cast iron skillet hot on an open fire. Add a tbsp (or more) of butter until its sizzling
2. Sprinkle salt and pepper over the snipe
3. Add the snipe to the pan and brown all over. Add the second tbsp butter and continue to cook for 5 minutes - continually turning or basting in the butter.
4. Add a handful of red currants to the pan and continue to cook for a further two minutes. Now move the pan to the edge of the fire and let it stand / rest for 4 minutes.
