Duck breast with salad
A simple and very healthy meal of beautiful duck breast and salad
4 Duck breasts
Salt and pepper
1. Prepare the salad - quarter the tomatoes and scatter amongst the green leaves. Add a little salt and pepper.
2. Heat a frying pan on high heat until hot. Whilst thats getting hot, score the skin side of each breast - don't penetrate the meat.
3. Place the duck breasts, skin down, into the pan (make sure you have removed any sinew from the breasts). Season the flesh side with salt and pepper whilst cooking the skin side for 5 minutes until the skin is crispy. Remove any excess fat. Turn the breasts onto the flesh side and cook for a further minute. Now place on a baking tray and put in a preheated oven at 200C. Cook for a further 4-5 minutes.
4. Remove the breasts, let them rest for 5 minutes and then slice thinly across the grain.
5. Serve with some salad.
