Jose Souto - Chef, Lecturer and Author of the Game Larder books Venison and Feathers

Jose Souto is possibly one of the most game focussed chefs in the UK. Born in London to Spanish parents, Jose embraces his Spanish cultural tradition, his English love of Fieldsports, his talent for cooking, and his vocation for imparting knowledge to others to really make an impact on the way we can all learn to access, harvest and cook game meat. If thats not enough, Jose has a passion for Birds of Prey and Falconry. It was a pleasure to spend a little over an hour chatting and learning more about this remarkable man.
