Jose Souto will be running a Venison butchery demo / course covering everything from field to plate. The course will include :
- Shot placement and reaction.
- Hanging/ Chilling.
- Head and feet removal.
- Breaking down carcasses into joints.
- Breaking down each joint into portions.
The demo will cover all aspects of the above with in depth explanation on each and time for questions.
Location: The demo will be in Nr North Elmham North Norfolk
Timings: The session will run from 11.00am to 2.00pm on Sunday 3rd of October 2021.
Costs: Tickets are £125 each and include a signed copy of Venison or Feathers The Game Larder publication with every place.
