Jose Souto Butchery Masterclass

Jose Souto will be running a Venison butchery demo / course covering everything from field to plate. The course will include :

  1. Shot placement and reaction.
  2. Bleeding.
  3. Gralloching.
  4. Hanging/ Chilling.
  5. Head and feet removal.
  6. Skining.
  7. Breaking down carcasses into joints.
  8. Breaking down each joint into portions.

The demo will cover all aspects of the above with in depth explanation on each and time for questions.

Location: The demo will be in Nr North Elmham North Norfolk

Timings: The session will run from 11.00am to 2.00pm on Sunday 3rd of October 2021.

Costs: Tickets are £125 each and include a signed copy of Venison or Feathers The Game Larder publication with every place.
